Ingredients

  • ½ cup hot brewed coffee
  • 2 tbsp cream
  • ¼ vanilla extract
  • 1 tbsp sugar
  • some Grewia asiatica (falsa)
  • 2 tbsp of caramel
  • 1 cup ready-to-serve organic white rice

Instructions

Step 1: Take a microwave bowl, and heat ready to serve white rice. After this in the same bowl add cream, coffee, vanilla extract, and sugar and mix it all well with the rice.

Step 2: Start the microwave on high, and place the mixed ingredients bowl in it for 60 to 90 seconds. The rice turns into a creamy texture and most of the liquid of all the ingredients has been absorbed. Let them rest for two minutes.

Step 3: Dish out a pudding and give a topping of some grewia asiatica (falsa) on it.

Step 4: Add a pinch of coffee powder over the top of the pudding.

Step 5: Keep 2 tbsp of caramel at high microwave temperature until it changes its form to crunchy.

Step 6: Add the crunchy caramel as a topping to the coffee rice pudding to make it yummier.


Energy Rice Bars

Ingredients

  • ½ cup dark chocolate chips
  • ⅓ cup peanut butter
  • ¼ cup walnuts
  • ¼ cup sliced almonds
  • 1tbsp coconut oil
  • 1/4 cup dried cranberries
  • 1 cup ready-to-serve organic brown rice and quinoa

Instructions

Step 1: Heat ready-to-serve brown rice and quinoa.

Step 2: Add chocolate chips, coconut oil, and peanut butter to a medium, microwave dish. Microwave in middle, stirring every 20 seconds, for 2 to 3 minutes, until mixture is melted and plainly sorted.

Step 3: Mix rice and quinoa into the melted chocolate batter and stir to mingle.

Step 4: Combine walnuts, almonds, and dried cranberries into the final batter.

Step 5: Put batter into a parchment paper-lined 8-inch square baking dish, or a 9x5 inch loaf pan. Freeze for almost 30 minutes, or until settle down, then cut the pieces into a bar.


Salted Caramel Rice Pudding Ice Cream Pie

Ingredients

  • 11/2 cups organic brown basmati rice
  • 11/2 cups cream
  • 4 tbsp caramel sauce
  • 11/2 cups water
  • 2 tsp vanilla extract 
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 19’’ chocolate cookie crumb pie crust

Instructions

Step 1: Gather cream and water in a middle-size saucepan over middle-high heat, and bring to a boil.

Step 2: Stir in rice and two tbsp caramel sauce. Set heat to medium-low. Cook and mix constantly for at least 8 to 10 minutes, until the rice is so edible and the batter has thickened. Sir in vanilla extract and cinnamon. Let it cool moderately.

Step 3: Spoon rice pudding batter into pie crust. Make it a smooth layer on the top.

Step 4: Drizzle with 2 tbsp caramel sauce on the top of the ice cream pie then freeze for 4 to 6 hours to get it ready.

Step 5: Before serving, leave it at room temperature for 8 to 10 minutes, or until it turns to soften a bit to eat.

Step 6: For further super taste, sprinkle cashews and walnuts over the ice cream pie and enjoy it.
